Casey's Sugar-free Chocolate Cake Pops with Cream Cheese Frosting

HOUSTON (KTRK) -- This is a yummy recipe for those on sugar restricted diets. It only takes one bowl, which makes it an easy recipe for chocolate lovers. Once they're topped off with cream cheese frosting, I promise you won't miss the sugar.
Casey's Sugar-free Chocolate Cake Pops with Cream Cheese Frosting
Ingredients:
- 3/4 cup unsweetened Dutch cocoa powder
- 1/2 cup all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 cups stevia (powdered, not liquid)
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup 2% milk with 1 tablespoon lemon juice (this is a substitute for cup buttermilk)
- 3/4 cup warm water
- 3 tablespoons safflower oil
- 1 teaspoon pure vanilla extract
Directions:
- Mix the dry ingredients first, then add all the wet ingredients. Mix for several minutes until smooth.
- Refrigerate batter for about thirty minutes before using in cake pop maker.
- Cook for approximately 4 minutes in cake pop maker.
- Cool on a rack.
Cream Cheese frosting:
- 8 oz 1/3 fat cream cheese
- 1/4 cup stevia
- 1 tablespoon vanilla
Directions:
- Mix all ingredients with a hand mixer until smooth.
- Frost cooked, chilled cake pop balls.
- Insert cake pop stick and decorate with sprinkles, if desired.
- Chill decorated cake pops until frosting is set.
