HOUSTON (KTRK) -- This Ceviche recipe from Shade in the Heights is quick, easy and we promise - it will disappear from your plate quickly.
Ingredients:
- 4 oz Snapper (medium dice)
- 2 garlic cloves (finely chopped)
- 2 tsp Limo chile (chopped)
- 20 limes (juiced)
- 1 tsp cilantro (chopped)
- 3 ice cubes
- 1 red onion (half-moon crescents)
- 1 oz Peruvian Corn
- 1 Sweet potato (baked)
- salt and pepper
Instructions:
1. Place fish in a bowl with salt and pepper, after a minute add garlic and limo chile, mix well
2. Pour over lemon juice, cilantro and ice cubes. Stir and let sit for 40 seconds
3. Add onion and remove ice cubes
4. Adjust seasoning to taste
5. Serve in a shallow bowl with corn and sweet potatoes
