Witnesses say the rider was "showing off" on the Katy Freeway feeder at Price Plaza Road around 12:45am.
Several people told deputies they saw the man speeding in the Sam's Club parking lot there.
Deputies say the rider tried to pop a wheelie with his Yamaha Speed bike, but lost control and crashed into a parked car.
He was airlifted to the hospital in serious but stable condition.
