Sushi vocabulary 101
There are hundreds of Japanese sushi terms, but don't worry, you don't need to know all of them to have a great dining experience. Here are some basics from Executive Chef Adison Lee of KUU restaurant:
- Maki -- Sushi rolls
- Nigiri -- Rice topped with sliced raw fish
- Sashimi -- Sliced raw fish served without rice
- Ahi -- Tuna
- Toro -- Belly Meat or Fatty Tuna
- Ebi -- Shrimp (cooked)
- Unagi -- Eel (cooked)
- Hamachi -- Yellow tail (raw)
- Kani -- Crab (cooked)
- Uni -- Sea Urchin (raw)
- Hotate -- Scallop (raw)
- Shoyu -- Soy Sauce
- Tamago -- Egg (cooked)
- Omakase -- Chef's choice menu
