HOUSTON (KTRK) -- Executive Chef Ryan Hildebrand shows us his recipe for Rock Cornish Hen, a dinner favorite he dishes up at Triniti each night.
ROCK CORNISH HEN: (FULL RECIPE)
1ea Rock Cornish Hen
1/2 ea Orange, Peeled
1 sprig plus one Thyme
1 sprig plus one Rosemary
4 ea plus one 1/2 head Garlic Cloves
1/4 ea, diced Yellow Onion
Salt and Pepper to taste
2T Blended Oil
2T Unsalted Butter
2T Truffle Cream (available in specialty store)
Season cavity with salt and pepper.
Stuff with onion, garlic, herbs, and orange.
Truss and season outside with salt and pepper.
Heat oil and butter in a sauté pan. Add hen breast side down. Baste with butter. Add garlic head and additional herbs. Continue to baste.
Place in 400 degree oven for 10 minutes. Turn over and baste.
Finish in oven for additional five to ten minutes.
Remove and glaze with truffle cream.
