Eat healthy this Super Bowl Sunday

Healthy Super Bowl
Food is as much a part of the Super Bowl as the game is, but you don't have to regret what you indulge in!

Each pizza bite is less than 30 calories.

Ingredients (for 24 mini muffins)

2 cups cooked Quinoa (approximately 1/2 cup uncooked)

6 Tbsp Pizza/Marinara Sauce (plus extra for dipping)

2 tsp onion powder

2 tsp garlic powder

2 tsp oregano powder

1 tsp sea salt

10 fresh basil leaves, chopped

2 egg (or flax seed substitute with 2 Tbsp ground flax + 6 Tbsp water)

1 cup shredded Italian blend cheese

Directions

Cook Quinoa - Rinse quinoa through a sieve till the water runs clear.

Transfer it to a small or medium sized pot and add two cups of water

and a dash of salt. Bring to a boil, reduce to a simmer. Simmer until

quinoa has absorbed all of the liquid and is fluffy (about 15-20 minutes).

Allow to cool.

Preheat oven to 400

Lightly spray muffin tin with olive oil

Mix all ingredients together in a bowl

Put a tablespoon of mixture in each muffin tin, packing tightly

Bake for 12-15 minutes until golden brown on edges.

Allow to cool, remove and serve with sauce
