Aaron Sheehan, 40, is charged with murder in the fatal stabbing of 77-year-old Anival Ortiz.
According to the Houston Police Department, officers responded to the stabbing call at around 5:55 a.m. on Aug. 8 at 123 North Drennan Street, where they found Ortiz with a stab wound.
Police say the 77-year-old was taken to a hospital, where he was pronounced dead.
Sheehan was arrested days later and scheduled to appear in court.
However, on his court date, he wasn't there. The judge said it was because he was in the mental health unit.
During the hearing, the judge laid out some of the details from the deadly incident.
"The complainant was on his bicycle and rode to his place of work and collapsed," the judge said. "His coworker was there and saw him collapse and noted he was bleeding and had been severely injured."
After officers arrived, the judge said they saw a blood trail. They followed it and found surveillance video from nearby businesses, with one of them, the judge said showing the stabbing caught on camera.

Investigators identified Sheehan, who was seen boarding a METRO transit shortly after the incident, in surveillance video that was released on Aug. 8.
Prosecutors told the judge about Sheehan's lengthy criminal history, including several charges from Georgia, and two others in Harris County.
Last year, documents show he was charged with aggravated assault with a deadly weapon after he hit a person with a metal pole. Sheehan pleaded guilty to a lesser theft charge in March, and he served only three months in jail after the agreement.
He cut the deal with the DA's office, despite his documented criminal history. Two months later, he was charged with murder.
A violent past and evidence from this case is why the judge agreed to set a high bond.
"It's a pretty violent scenario and he's got enough history and is transient," the judge explained. "So, bail is set at a million dollars. I'm not granting a personal bond."
Sheehan is scheduled to appear in court again Thursday. It's unclear if he'll be there.
His attorney says he was able to meet with him, but the judge said he's in the mental health unit.
