Servings: 12 cupcakes or 2 lbs.
- 1lb. unsalted butter, softened
- 1lb. powdered sugar, sifted
- 1tsp. vanilla extract
- In a mixing bowl combine butter and sugar. Mix until blended and free of lumps; 3-5 minutes.
- Add the vanilla extract and mix until all combined and the texture of the icing is light and fluffy.
