Bernie's Burger Bus Executive Chef Justin Turner shares his recipe for his popular hand-cut, crispy truffle-laced fries, which were recently voted the Best French Fries in Houston.

Truffle-Laced Fries

  • 3-4 Burbank Russet Potatoes, cut in 1/4-inch slices
  • Oil for frying
  • 1 teaspoon truffle oil
  • 2 tablespoons of freshly grated Parmesan cheese
  • 1 green onion slices thin
  • Salt and pepper to taste

Cut potatoes and place in 250-degree oil for 12 to 15 minutes. You will see the bubbles start to slow down, which means the moisture is getting out of the potato. Take the fries out and let cool slightly while your oil heats to 350 degrees. Once the oil has heated, place the fries back into the hot oil and fry until golden brown and crispy. Immediately season with salt and pepper, then add truffle oil and Parmesan cheese. Plate and top with green onions. Enjoy!
