2-in-1 French Toast turns breakfast into dessert

French toast, two ways

HOUSTON (KTRK) -- Half the work and twice the reward! This unique French toast recipe from Jonathan's the Rub will help you transform breakfast into dessert. It's a perfect dish for Mother's Day... or any day!

Jonathan's The Rub Brioche French Toast

4 servings

Mango Topping

- 1 cup diced mango

- 1/2 cup mango nectar or orange juice

Custard

- 4 eggs

- 1/2 cup of heavy cream

- 1-teaspoon vanilla extract

- 1/2 - teaspoon of cinnamon

French Toast

- 4 2in slices of Brioche French Toast (Or Challah, available at Three Brother's Bakery)

- 3 tablespoons of unsalted butter

Toppings

- 1.5 cups of maple syrup (Amber A Maple Syrup)

- Quarter cup confection sugar

1. Combine diced mango with mango nectar and soak for 20 minutes; set aside while soaking and begin preparing custard

2. Combine ingredients for custard in large mixing bowl; whisk heavily until cinnamon and vanilla are evenly distributed throughout mixture

3. Evenly soak each piece of French toast in custard mixture for about minute

4. In a 14in saut pan, melt 2 tablespoons of butter over medium-high heat; before butter turns brown, add two pieces of French toast to the pan and cook on first side until golden brown (about 3 minutes); flip to other side and cook until golden brown (about 1-2 minutes)

5. Remove pieces from pan

6. Add 1 tablespoon of butter to pan and repeat browning process with other two pieces

7. Remove from heat

8. Drain mangos after 20 minutes of soaking

9. Cover the bottom of each of the four plates with maple syrup; place one slice of French on each plate; divide mango into four equal parts and top each piece of French toast; sprinkle sugar evenly over the four pieces

Brioche Francais - 4 servings

Toppings

Sour Cherry Sauce (Available at The Polish Food Store)

4 scoops vanilla ice cream

Caramel syrup

Repeat preparation of mango topping, custard, and browning process.

Add sour cherry sauce to the bottom of each of each plate; place one piece of French toast on each plate. Top each piece of toast with a scoop of vanilla ice cream and mango topping; drizzle caramel syrup over each dish.
