The secret ingredient? Avocado!
The pastry chefs at Ruggles Black along with executive chef Bruce Molzan developed this top-selling dessert that's just as easy to make at home, as in the restaurant.
- Avocado Chocolate Mousse
Ruggles Black
Serves 4-6
For the mousse:
4 Ripe Avocados
1 Cup Cocoa Powder
1 Cup Coconut Milk
2/3 Cup Honey or Agave
Use a Food Processor to mix all ingredients until smooth.
For the coconut whip (optional):
Full fat coconut milk
Vanilla and/or agave
Place can of full fat coconut milk in the fridge, to allow the fat to separate (best done overnight). Whip the separated fat with a touch of vanilla and agave. Top mousse with coconut whip.
