There are hundreds of Japanese sushi terms, but don't worry, you don't need to know all of them to have a great dining experience. Here are some basics from Executive Chef Adison Lee of KUU restaurant:

  • Maki -- Sushi rolls
  • Nigiri -- Rice topped with sliced raw fish
  • Sashimi -- Sliced raw fish served without rice
  • Ahi -- Tuna
  • Toro -- Belly Meat or Fatty Tuna
  • Ebi -- Shrimp (cooked)
  • Unagi -- Eel (cooked)
  • Hamachi -- Yellow tail (raw)
  • Kani -- Crab (cooked)
  • Uni -- Sea Urchin (raw)
  • Hotate -- Scallop (raw)
  • Shoyu -- Soy Sauce
  • Tamago -- Egg (cooked)
  • Omakase -- Chef's choice menu
