Sweet Potato Casserole from My Smart Chef

The healthy alternative from My Smart Chef
Serves: 8-10
Ingredients:
- Cooking spray
- 4 pounds sweet potatoes (about 5-6 medium), peeled and cut into 1-inch pieces
- 1/4 cup Agave Nectar (can substitute honey or maple syrup)
- 2 teaspoons of Stevia
- 1 large egg
- 2 teaspoons ground cinnamon, plus 1/2 teaspoon for the pecans
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 1 tablespoon packed dark brown sugar
- 1/3 cup finely chopped pecans
Instructions:
- Preheat the oven to 425 degrees. Lightly coat a 9x13 baking dish with cooking spray.
- Fill a large pot with enough water to cover potatoes completely. Bring to a boil with the lid on and remove the lid once brought to a rolling boil. Cook until potatoes are fork tender, about 20 minutes.
- Drain the potatoes completely and add back to the hot pot. Add the agave, egg, stevia and spices and mash all together until smooth.
- Spread the sweet potato mixture in the prepared baking dish.
- Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in a small bowl; sprinkle over the potatoes.
- Bake until beginning to brown around the edges, about 30 minutes.
