Sweet Potato Casserole from My Smart Chef

The healthy alternative from My Smart Chef

Serves: 8-10

Ingredients:

  • Cooking spray
  • 4 pounds sweet potatoes (about 5-6 medium), peeled and cut into 1-inch pieces
  • 1/4 cup Agave Nectar (can substitute honey or maple syrup)
  • 2 teaspoons of Stevia
  • 1 large egg
  • 2 teaspoons ground cinnamon, plus 1/2 teaspoon for the pecans
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1 tablespoon packed dark brown sugar
  • 1/3 cup finely chopped pecans

Instructions:

  1. Preheat the oven to 425 degrees. Lightly coat a 9x13 baking dish with cooking spray.
  2. Fill a large pot with enough water to cover potatoes completely. Bring to a boil with the lid on and remove the lid once brought to a rolling boil. Cook until potatoes are fork tender, about 20 minutes.
  3. Drain the potatoes completely and add back to the hot pot. Add the agave, egg, stevia and spices and mash all together until smooth.
  4. Spread the sweet potato mixture in the prepared baking dish.
  5. Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in a small bowl; sprinkle over the potatoes.
  6. Bake until beginning to brown around the edges, about 30 minutes.
