Erik's healthy breakfast
What does Erik Barajas eat for breakfast to stay fit? Check out his meal.

HOUSTON (KTRK) -- It's the clean fuel you'll be burning to kick start your day. I'm talking about breakfast.

I like to start the day with a healthy and clean meal. That sets the tone for the rest of the day.

You can easily reduce the quantities if you want a smaller meal. I make 6 egg whites, in a pan with olive oil spray. They are done in minutes and I add some spices or salsa on top.

Next, I scoop out a 1/4 cup of nuts, usually almonds or cashews.

Lastly, I add a cup of fresh fruit: strawberries, blue berries, raspberries or green apples.

It's a power breakfast that's high in protein and low in calories, and if you stick with this and add some other healthy meals, you'll notice a difference in your waist line.
